Tasting Notes

A coral-colored rosé wine offering intense aromas of pomegranate, redcurrant, gooseberry, wild berries and strawberry. On the palate it is soft, fresh, with elegant minerality and persistence.

Ideal with summer aperitifs or seafood.

Description

The grapes, hand-harvested at the first light of dawn, are quickly transferred to the winery.

Here, after a few hours in contact with the skins, a gentle pressing is carried out to extract the finest part of the must, with a yield of about 50%: only the free-run juice is used. Settling at 4–5°C lasts overnight, and after racking, fermentation begins at a controlled temperature of 14°C for about 15 days.

During the following 6 months of aging in temperature-controlled stainless steel tanks, repeated bâtonnage is performed. By keeping the fine lees in suspension, this technique enhances the full expression of the grape’s characteristics.
